Baked Spaghetti Squash with Garlic and Butter

You can under-bake the spaghetti squash just a bit, so it still retains just a slight crunch. Baking time really depends on how big your squash is - try to get the smallest one, especially if you’re only feeding 4 people. It’s ready if you can pierce the squash with a paring knife with little resistance. If you’re a garlic love, don’t be shy - use more! Alternatively, microwave the whole squash for 2-4 minutes (to soften enough to cut lengthwise). Place squash cut-side down on baking sheet and roast for 30 minutes until tender

Aunt Evelyn's Meatloaf

Meatloaf recipes are as varied as the cooks who make them. My Aunt Evelyn's version is easy to make, delicious, and laced with shredded cheese. She would often vary the type of cheese used. Her favorite was cheddar, mine was pepper jack, my Uncle Victor liked swiss, but other cheeses or cheese combinations often appeared and made for subtle and tasty differences.

Chicken Tortilla Soup ala Steve

About ten years ago, my wife and I enjoyed a terrific bowl of tortilla soup at a cafe perched above the bustling streets of Cabo San Lucas, Mexico. I've been trying to reproduce it ever since; this is fairly close. The secret is in the lime juice, and the freshly made tortilla crisps added at the table.
